As a Vegetarian I am always looking for fun things to cook so that my roommates don't complain when it's my day to cook and there is no meat on the table.

So, I'll just share with you some of my more popular concoctions. =)

Cheesy Rice and Broccoli Casserole


Ingredients:

1/2 cup Butter
1 large yellow Onion
2 small heads of Broccoli
1/3 cup Milk
1 can Cream of Mushroom Soup
1 1/2 cups Shredded Cheddar Cheese
1 1/2 cups Cooked Brown Rice

1.) Melt Butter in large skillet, then add chopped onion until tender
2.) Stir in chopped broccoli, turn down to medium heat, place lid, and let simmer for 10 minutes, or until broccoli is tender.
3.) Stir in milk, cheese, cream of mushroom soup, and rice until cheese and rice are even distributed.
4.) Transfer to 13x9 cake pan or casserole dish 
5.) Bake at 350 degrees Fahrenheit for 30-35 minutes.
6.) Dish out, and enjoy!


Mexican Stuffed Avocados 


Yesterday was my turn to cook for the apartment! I made a spicy Mexican feast! 

In addition to the black bean enchiladas and rice, I made these avocados. I found the idea on Pinterest, but I didn't much like how the recipe sounded...so I made it up!

It was a TOTAL success with my roommates! (and myself) And since then I've had several requests for the recipe. Therefore, I thought I would share it here. =)

Ingredients: 

1 Onion, chopped (I used red, though you could probably use yellow or white)
1 Bell Pepper, chopped (again, I used green, you could probably use whatever you have on hand)
1 Clove of Garlic, minced
1 tsp Olive Oil
5 Avocados
1 Can of Rotel Tomatoes with Chilies
1 cup Bread Crumbs
1/2 cup Shredded Pepper Jack Cheese
1/2 cup Cheddar Cheese

1.) First, you need to saute the Onions, Bell Peppers, and Garlic in the Olive Oil.
2.) In a bowl, mix together, the Rotel, Bread Crumbs, and both kinds of Cheese, then add the Onions, Bell Peppers, and Garlic mixture when they are tender. (mix together well, make sure everything is evenly distributed, the cheese will probably be melty, and that's ok.)
3.) Cut the Avocados into halves and place on baking sheet. Spoon mixture into the pits of the avocados, don't be afraid to add a lot. 
4.) Bake on top rack at 450 degrees Fahrenheit for 5-7 minutes.
